Ingredients:

  • 1kg chicken, cut into small pieces
  • 2 cups coconut milk
  • 1 cup water
  • 3 stalks lemongrass, bruised
  • 2 turmeric leaves, finely sliced
  • 2 kaffir lime leaves, finely sliced
  • 2 tbsp tamarind paste, dissolved in 1/2 cup water
  • 1 tsp salt
  • 1 tsp sugar

Spice paste:

  • 10 dried chillies, soaked in hot water
  • 5 red chillies, chopped
  • 10 shallots, chopped
  • 5 cloves garlic, chopped
  • 2cm ginger, chopped
  • 2cm galangal, chopped
  • 2 stalks lemongrass, chopped
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder

Firstly, blend all the ingredients for the spice paste until it becomes a fine paste. Then, set aside.

Next, heat up some oil in a pot and sauté the spice paste until fragrant. Add in the chicken and stir until it's fully coated with the paste. Then, add in the lemongrass, turmeric leaves, and kaffir lime leaves. Stir again for a few minutes.

Pour in the coconut milk and water into the pot. Add in the tamarind juice, salt, and sugar. Stir well and let it simmer on low heat for about 1 to 2 hours, or until the chicken is tender and the gravy has thickened. Remember to stir occasionally to prevent the gravy from sticking to the pot.

Once the chicken is cooked, remove it from the heat and let it cool down for a few minutes. Then, transfer it onto a serving dish, and voila! Your delicious Rendang Ayam Negeri Johor is now ready to be served.
