Ingredients

  • 1 carrot, julienned
  • 1 potato, cubed
  • 1 stalk of lemongrass, bruised
  • 3 tbsp of curry powder
  • 1 can of coconut milk
  • 1 chicken breast, sliced into thin pieces
  • 1 tbsp of cooking oil
  • Salt to taste

Instructions

Here's how you can make this delicious Mee Kari:

  1. Boil a pot of water and cook the instant noodles according to the instructions. Drain and set aside.
  2. Heat the cooking oil in a wok or a large pan.
  3. Saute the onion and garlic until fragrant.
  4. Add in the sliced chicken and cook until the chicken is no longer pink.
  5. Add in the julienned carrot, cubed potato and bruised lemongrass.
  6. Stir in the curry powder and mix well.
  7. Pour in the can of coconut milk and stir to combine.
  8. Season with salt to taste.
  9. Let the sauce simmer for about 10 minutes.
  10. Place the cooked instant noodles in a serving bowl.
  11. Pour the sauce over the noodles.
