The Instructions

  1. Wash the rice thoroughly and soak it in water for 30 minutes.
  2. Heat some oil in a pan over medium heat. Add the onion, garlic, and chili and sauté for a few minutes until fragrant.
  3. Add the cinnamon stick, star anise, cloves, and cardamom pods and sauté for another minute or two.
  4. Stir in the diced tomatoes, chicken broth, tomato paste, sugar, salt, and pepper. Simmer for about 5 minutes.
  5. Drain the rice and add it to the pan. Stir well to combine.
  6. Bring the mixture to a boil, then reduce the heat to low and cover the pan.
  7. Cook the rice for about 20 minutes or until it is fully cooked and fluffy.
  8. Remove the pan from the heat and let it sit for about 5 minutes.
  9. Fluff the rice with a fork and serve hot.
